This banana bread may just be my favourite breakfast food! A warm, moist and fragrant baked delight, comfort food for most Sunday sleep-ins. While it may be tempting to conveniently pour some cereal instead, I found this recipe (via Home Cooking Adventure) relatively easy to handle and one of the best ones I’ve discovered so far!

Home-Baked Banana Bread:

Ingredients: 

  • 3 or 4 ripe bananas, makes about 1 and 1/4 cup or 300g of puree (ripe bananas are the best for making banana bread!)
  • 1 cup (125g) flour
  • 2 tsp (8g) baking powder
  • 1/4 tsp (2g) baking soda
  • 1/4 tsp (2g) salt
  • 1 tsp (3g) cinnamon powder
  • 1 stick (113g) butter, room temperature
  • 3/4 cup (150g) sugar
  • 2 eggs
  • 1/3 cup (70g) sour cream
  • 1 tsp (5g) vanilla extract
  • 3/4 cup (75g) walnuts, chopped

Directions: 

  1. Mash up your bananas in a bowl.
  2. Mix flour, baking powder, baking soda, salt and cinnamon powder in a separate bowl till they’re evenly distributed.
  3. In another bowl, add the butter and sugar and mix until creamy.
  4. Add the eggs, sour cream, vanilla extract and mashed bananas to the butter bowl in order, incorporating them into the mixture one at a time.
  5. Mix until well incorporated.
  6. On low speed, incorporate the dry ingredients – the flour mixture.
  7.  Add the cup of chopped walnuts into the mixture and stir.
  8. Lightly grease your loaf pan.
  9. Line the bottom with parchment paper.
  10. Pour the mixture in and make it even with a spatula or a spoon.
  11. Sprinkle chopped walnuts on top.
  12. Bake in the preheated 180˚C oven for about 50-60 minutes until golden brown and a toothpick inserted into the centre comes out clean.
  13. Remove from oven. Let the bread cool in the pan for 10 minutes.
  14. Invert on a wire pan and serve!
